Beyond the buttons and the portobellos lies a fungi world of amazing textures and flavors. Mushrooms are growing in popularity, and more and more varieties are now available. Edible mushrooms have an earthy, slightly woodsy, meaty flavor and are one of the foods that contain umami, the fifth primary taste. Chefs describe umami as a savory, brothy taste that spreads across the tongue and lingers in your mouth. Being a primary taste, it’s unique, and you cannot create it by combining other tastes. Mushrooms have delicious flavors that vary from rich and decadent to subtle, delicate, and fresh depending on the type of mushroom. Because of their meaty, umami taste, vegetarians and vegans often use mushrooms as a meat substitute in their dishes.
There can be a lot of confusion about the different truffle grades, so we will go through them with you. Our grading standards are detailed below.
Extra Class Large (80+ grams) — These are the largest, most highly regarded of all the offerings, and the best for making a statement. A true show-stopper. As with all of our Extra Class Truffles, these are in pristine, flawless condition both aesthetically and aromatically.
Extra Class Medium (15 – 80 grams) — The creme de la creme and no less stunning, but a bit smaller. Fantastic aroma, shape, and texture.
First Class Mixed Sizing (10 – 100 grams) — These little guys may be broken, misshapen, or discolored from tree root staining, but their aroma is intact and just as flavorful.
Second Class (Under 15 grams or broken) — These little guys may be broken, misshapen, or discolored, but their aroma is intact.
